I made a keto cloud cheese danish!

I made a keto cloud cheese danish for the first time ever! I wanted to take the guess work out of this recipe, and made my own quick version. What I love about this danish is that the inside is so cheesy and the outside is just covered in butter…it is literally like a giant butterbomb.

This is my favorite kind of keto danish. I am a huge Danishes fan, and all my other danish recipes are mostly made with almond flour, so for me, these are a life-saver. I also added jalapeno powder to kick it up a notch, because why not. :)

So what does keto eating look like if you already have a sweet tooth, and just want to enjoy some of your favorite treats, you still keep a high fat keto ketogenic diet! Afterall, I eat these ALL the time, and still love them!

This isn’t a diet… it’s a lifestyle!

This easy keto cloud dough is easy to whip up, gluten free, grain free, butter free and sugar free! These easy keto cloud doughs combine 2 tablespoons of coconut flour, and you can add in up to 4 tablespoons of chocolate chips, walnuts, coconut chips, or whatever you want to add to these scrumptious treats! They are great as individual cookies, dough balls, muffins, or you can even add in a dollop of heavy cream, cream cheese and whip them up into a cheesecake like treat! Any of those options would be perfect for a weekend treat. I love everything about a homemade keto cheesecake!

When you first start keto, it's natural to have some moments of wanting comfort, and one of my all time favorites foods is pizza! I always remember when my husband first told me he wasn't eating carbs, and he was starting a keto plan I told him to save it for pizza, we couldn't eat pizza then, and of course he didn't understand that part! I always feel badly when he asks me for pizza because the carbs just never seem to work for us. I remember those days and he was eating just about anything but pizza.

I had not made a pizza yet for a couple of years because I was a little intimidated at first, thinking I would just have to be creative to use up all my cauliflower to be able to eat any other kind of pizza! But I found a video that showed me how to make a simple dough into which I added cauliflower, onions, and chicken as the topping! I also threw in some cheese because why not, and it still works and is a great way to use up some of the things I'm so good at cooking! You can also use beef or turkey instead of chicken and I will leave that up to your imagination!

Cauliflower pizza dough is really easy to make and can be kept in the freezer. I highly recommend you try it once, but you can actually take it straight to the oven and bake it up in under 10 minutes! It's so delicious you will never be able to have a carb filled pizza again! It's also very low in carbs so you can feel a little more comfortable eating with it on keto as it should be for your macros! You will find that when you get your carb count down, you will be missing some of your favorite foods. So being able to find a way to use cauliflower so you can eat those foods is important! This is a great one to try if you're ready to give up carbs but you still want to include those foods!

It has been almost 3 months since my 30 day keto challenge started and as I write this, it’s the 16th day.

Keto has been a blast for me!

I got to the point where I didn’t even recognize myself. I look in the mirror now and don’t even think I’m a size 10. I know I can’t sustain this lifestyle forever so I’m figuring out where I want to go after 30 days. The past few days however, I’ve felt like myself again and I feel soooo GOOD. 

The best thing about this lifestyle is the way I feel physically after eating. I can finally go and eat anything I want without binging and without feeling like I’m eating a huge meal. I’m not going to go into diet after diet where you have to take certain kinds of food to keep yourself from getting fat. This way I can enjoy all kinds of food and I won’t feel like I’m on an elimination diet.

I know what it’s like to try new diets and see how it works out for you but this life style is the way to go. It’s so simple and it’s working for me. If it doesn’t work for you, that’s okay… I’m sure there are plenty of other diets out there you can try. But for me this diet works wonders so I’m going to stick with it.
